WHAT YOU NEED
PREP & COOK
  • ​3 - 3.5 lb. Pork or Beef Roast (Best roasts will have a layer of fat on top)

  • 2 Tbsp Olive Oil

  • 1 tsp Lemon juice

  • 1/2 tsp Salt

  • 1 Tbsp Sultry Shake & Rub for pork roast OR 1 Tbsp Naughty Shake & Rub for beef roast

In a small bowl combine olive oil, lemon juice and salt. If you were able to find a roast with a layer of fat on top of the roast, lightly score the fat in a "x" pattern. Stir mixture and coat entire roast. Once coated in the mixture, generously rub the Angell Spice all over the roast. Let stand in fridge covered for 30 min.

Preheat oven to 500°F. Remove roast from fridge. Place roast on a roasting rack with fat layer on top. Place roast in pre-heated oven for 15 mins to sear the outer layer of the roast. Then while leaving he roats in the oven, reduce heat to 300° and (for medium cook) continue cooking for approx. 1.5 - 2 hrs or until internal temperature reaches 145°F. Once cooked, remove from oven and place on cutting board covering it with tin foil for 15-20 min. Remove tin foil slice and serve. Enjoy!

  • For a saltier crust, try also rubbing on Montreal Steak Spice.

  • Don’t forget the gravy! We just use beef broth powder with water and cornstarch or the packaged gravies. To both types we always add the roast drippings!

In your life if you know even just one person that can make a phenomenal beef or pork roast and that will let you in their door to eat it every once and awhile, consider yourself lucky! If you know two roast gods you are in heaven! We happen to know two: Uncle Robert with his Havens Spiced Beef we get to melt into every Christmas and Keith Angell with any roast, really (they keep on getting better and better every time). Not sure if Uncle Robert will allow us to publish his Havens Spiced Roast recipe but until he does we will let you in on the Angell Spice Beef or Pork Roast recipe and techniques.

A good roast will incredibly juicy without being raw and slightly chewy without being rubbery at all. Most importantly you want to make sure that any flavours that you apply to your rast are penetrated throughout the roast. We suggest adding as your sides: Sautéed Mushrooms, Tamed Caesar SaladTwice-baked Halo Potatoes and Yorkshire Pudding (do not have a recipe for pudding on this site yet).
