TWICE-BAKED HALO POTATOES

  • 4 large potatoes

  • 2 Tbsp butter

  • 1 Tbsp milk

  • 1/2 cup ranch dressing

  • 3/4 cup marble cheese, shredded

  • 1/4 tsp of garlic salt

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 Tbsp Sultry Angell Spice Shake & Rub

  • 2 green onions, chopped

  • 3 slices of bacon (cooked, crumbled)

Twice-baked potatoes are some of life’s most heavenly side dishes! Though “side-dish” may be an overstatement as they are so filling they could be considered a small meal. Usually half of a twice-baked potato is plenty when accompanying a protein such as a nice juicy Angell Spiced Steak so this recipe technically could yield 8 servings. This recipe is absolutely one of our favourites! It’s an amazing balance of seasonings, creamy, smooth textured potatoes and a crispy peel and topping. We prefer Sultry Angell Spice Shake & Rub for this recipe but as always, any Shake & Rub will be a fantastic compliment!

Preheat oven at 400°F.

 

Wash potatoes, pat dry and pierce them several times all over with a fork. Rub the potatoes with 1 Tbsp of butter (this is enough to cover all 4 potatoes) and garlic salt. Wrap with tin foil and place on a cookie sheet. Bake the potatoes for 45-60mins to or until done.

 

While the potatoes are cooking, cook and crumble all bacon and prep potato ingredients and garnish.

 

Remove the potatoes from the oven and cut them across along the top of the potato (slice in approx. a third way in). Set aside. Reduce temperature of the oven to 350°F.

 

When the potatoes are cool enough to handle, scoop out the potato insides creating a potato-skin bowl shape (leave a 1/4 inch of potato lining), and place insides into a large mixing bowl.

 

Add the milk, remaining butter, ranch dressing, bacon, cheese, salt, black pepper, and Angell Spice (leave a little bacon, cheese and green onion aside for garnish). Mix until creamy.

 

Divide the mixture evenly into 4 portions and spoon it back into the potato shells. Garnish with remaining bacon, cheese and green onion. Return the potatoes to the oven for 15mins. Remove and let stand for 5mins.

RECIPE NOTES & TIPS

For bacon that cooks evenly and doesn’t curl up as it cooks, try laying the bacon flat on a greased cookie sheet at 375°F and flip after 10 mins and cook for another 3-5 mins (monitor as it cooks fast once flipped!).
