CIABATTA BACON CHEESEBURGER

RECIPE NOTES & TIPS

Suggested Toppings:

  • Sauteed sliced mushrooms

  • Fresh tomatoes, sliced

For a Spicier Burger:

WHAT YOU NEED

Burgers:

  • 2 lbs ground beef

  • 1/2 lb mild Italian ground sausage

  • 1 medium yellow onion, diced

  • 1/2 medium red bell pepper, diced

  • 1/2 medium yellow bell pepper, diced

  • 1 cup grated marble cheese

  • 1 sleeve salted crackers, crushed

  • 2 large eggs

  • 1 Tbsp minced garlic

  • 1 tsp Montreal Steak Spice

  • 1 tsp Naughty Angell Spice Shake & Rub

  • 1 tsp black pepper

  • 1/2 tsp Seasoning Salt

  • 1 tsp Italian Seasoning

  • 1 tsp dry oregano

  • 1/2 cup BBQ Sauce

  • 1/3 cup Teriyaki Sauce

  • 1 Tbsp Frank’s RedHot Sauce (for taste not heat)

  • 1 lb bacon strips

  • 12 slices cheese of choice

  • 12 ciabatta buns, toasted

 

Roasters:

  • 1 bag baby red or yellow potatoes,

  • 2 Tbsp olive oil

  • 1.5 tsp Tame Angell Spice Shake & Rub

  • 1/2 tsp black pepper

  • 1/2 tsp Montreal Steak Spice

  • 1/2 tsp Seasoning Salt

  • 1/2 tsp Italian Seasoning

  • 1/2 tsp dry oregano

  • 1 tsp of bacon grease

Burgers: Grill until patties are well done (min. 165°F inside temp). Be careful not to char the meat and DO NOT press down on the patties with a spatula while cooking - you’ll squeeze out all those flavourful juices! Add cheese slices to each paty approx. 2 mins before done. While the patties are cooking, place the ciabatta buns face down on the grill until just toasted (approx. 4-5 mins). Build Your Burger!!

 

Roasters: Place in 475°F pre-heated oven, turning occasionally,

until potatoes are cooked through and browned on all sides, approx 35-45 mins.

Burgers: Pre-heat oven to 375°F and pre-heat BBQ grill on high heat (450-650° F) for 15 mins (ensure grill is clean and greased, spray or oil soaked towel).

Place bacon strips on a greased cookie sheet and dust with Naughty Angell Spice and black pepper. Cook for 15 mins, flip strips and cook for 5-10 mins more. Keep 1 tsp of bacon grease set aside for roasters. Crumble 4 pieces of bacon, set the rest of the bacon strips aside for burger garnish. Raise oven temp to 475°F for roasters.

Place crumble bacon in a large bowl with all the burger ingredients except the crackers (if ground sausage is in an encasement, 

remove the meat from the encasement). 

Once all is mixed together add crushed crackers to soak up as much liquid as possible (approx. 3/4 sleeve). The burger mixture should be moist not wet. Form into patties (1/2 in. thick, 4" diameter) and place in fridge while prepping the roasters.

 

Roasters: Wash potatoes, pat dry and cut in half, then cut the halves in half. In a medium bowl toss cut potatoes in olive oil and bacon grease until evenly coated. Add in the rest of the roaster ingredients and toss very well until thoroughly coated in spices. evenly spread out potatoes on greased cookie sheet.
